Wholegrain, No butter and No Sugar? 'Sounds like cardboard' I hear those in the back shout. Right?! Wrong.. Even I'm shocked at how well these turned out.
Super easy to make, too, with basic ingredients and only one mixing bowl! Feel free to add mix-ins of your choice, like chocolate chips or toasted walnuts. Recipe makes 12 muffins.
INGREDIENTS
⅓ cup melted coconut oil
½ cup maple syrup
2 eggs
1 cup packed mashed ripe bananas (about 3 bananas)
¼ cup milk of choice
1 teaspoon baking soda
1 teaspoon vanilla extract
½ teaspoon salt
½ teaspoon mixed spice or cinnamon, plus extra for sprinkling on top
1 ¾ cups whole wheat flour
⅓ cup oats (optional), plus extra for sprinkling on top
METHOD
Preheat the oven to 165 degrees Celsius
In a large bowl, mix the coconut oil and maple syrup together with a whisk making sure no lumps are left - sometimes it helps to warm the coconut oil through. Add the eggs and beat well. Mix in the mashed bananas and milk, followed by the baking soda, vanilla extract, salt and mixed spice.
Add the flour and oats to the bowl and mix with a large spoon or throw it all in a mixer just like me, until combined. If you’d like to add any extra like nuts or chocolate wack them in now.
Divide the batter evenly between the muffin cups, filling each cup about 3/4 full. I like to use Muffin cases but if you have a grease-proof tin feel free to pop batter straight in. Sprinkle the tops of the muffins with oats and a little mixed spice. Bake muffins for 22 to 25 minutes, or until a toothpick inserted into a muffin comes out clean. Each oven has its own personality so mine usually takes 25 before scorching everything.
Pop the muffin tin on a cooling rack to cool (duh). You might need to run a butter knife along the outer edge of the muffins to loosen them from the pan. The muffins will keep at room temp for a couple days, or in the fridge for up to 4 days. I usually freeze them in a freezer bag and defrost single muffins to save me from myself - As I have zero self discipline
